  • Parchment Paper. For lining the pan with.
  • Large microwave safe mixing bowl To melt ingredients in.
  • Rubber spatula For combining ingredients and transferring the ingredients to the pan.

  • White Chocolate Chips. Select sugar free white chocolate 'baking chips' as they can be heated for a recipe such as this one. The baking chips usually have cocoa butter as an ingredient.
  • Sugar Free Condensed Milk is preferred in this recipe. However, you can alternatively use a full fat coconut milk instead.
  • Butter. Salted butter was used in this recipe, however unsalted butter could instead be used.
  • Strawberry Extract This is what gives the fudge that strawberry flavor.
  • Pink Food Coloring We use food coloring to make the fudge pink.
  • Freeze Dried Strawberry Pieces. This is added as a topping as well as part of the filling. Regular strawberries will not work as they contain moisture.

Tips for making the best strawberry fudge.

While this fudge is strawberry fudge, you could easily use another fruit flavor, such as blueberry, to make your fudge. Simply substitute in food coloring, extract, and dried fruit to reflect the fruit of your choice.

Ingredients

  • cups Sugar Free White Chocolate Chips
  • 14 oz Sugar Free Condensed Milk - full fat coconut milk is an alternative
  • ¼ cup Butter
  • 1 tsp Strawberry Extract
  • Pink Food Coloring - as needed for color
  • ¼ cup Freeze Dried Strawberries - divided

Instructions

  • Prepare your baking pan with parchment paper that overhangs the sides of the pan.

  • In a large microwave safe bowl, combine together the white chocolate chips, unsweetened condensed milk, and butter. Microwave the ingredients, stopping to stir every 30 seconds, until the ingredients have melted. Be sure to stir well each time, until the chocolate chips and butter have melted, and the mixture is smooth.

  • Next, stir in the the strawberry extract. Then use a rubber spatula to fold in half of the dried strawberries.

  • Lastly, blend in enough food coloring needed to get a pink color.

  • Transfer the ingredients to the prepared baking pan.

    Sprinkle over the remaining freeze dried strawberries over the fudge.

  • Place your fudge into the refrigerator to set. It should take at least 4 hours to set but, overnight is preferable.

  • To slice the fudge, first use the parchment paper to lift if from the baking pan and then place the parchment with the fudge on to a flat surface, such as a cutting board, to cut into pieces.
