About this coffee cake recipe.

This is a sugar free version of coffee cake.
While this is not a difficult recipe to make, it does take following the steps to make it.

There are four layers to this cake.
We will pour half of the batter into the prepped pan, top it with a sweet filling layer, and then add the remaining batter. Finally, there is a sugar free crumble-like topping that can go on top.

Ingredients needed.

To make the topping.

  • In a medium bowl, combine together the flour, brown sugar, and cinnamon.
  • Cut the butter into the mixture.
  • Set this aside until ready to use.

This is the layer that will go between the two layers of batter.
The filling layer in meant to be a small layer that gives added flavor to the cake.

To make the filling layer, simply combine the following ingredients in a small bowl.

How to make Sugar Free Cinnamon Coffee Cake

  • Start by making the top crumble layer and filling layer as indicated above. Set these aside while you work.
  • Preheat your oven to 325 and prep a cake pan for nonstick. I use parchment and a square cake pan (9") however, a 9X13 cake pan should work too for this recipe.
  • In a medium bowl use a fork or a whisk to blend together the flour, baking soda, and the cinnamon. Set this bowl aside.
  • Beat together the butter with the sugar alternative until creamy. Then add the eggs, one at a time, mixing between additions. Lastly, you can add the vanilla extract.
  • Now in this step we will alternate adding the sour cream and the flour mixture from the first bowl to the mixing bowl. Add ½ of each at a time, mixing gently between additions. Mix until just combined.
  • To layer cake for baking. Pour half of the cake batter from the mixing bowl into the prepped pan. Top this layer with the filling layer. Then cover the filling layer with the remaining batter. Lastly, top this with the topping layer.
  • Bake your coffee cake for 60-65 minutes or until a toothpick comes out clean. Allow your cake to cool before serving.
