I love rotisserie chicken and my family knows that if I’m shopping at Costco then it’s on the menu for that night with leftovers the next day. But you don’t have to just cut apart that chicken and eat it plain with a couple of sides (although, that’s pretty delicious to do). Rotisserie chicken is such a versatile food. If you’re tired of eating it alone, try adding it to some amazing recipes to create an epic dinner. Ingredients

  • 8 cups of rotisserie chicken, shredded (mix up the white and dark meat)
  • 1 packet of taco seasoning or make your own
  • 4 oz. cream cheese, softened
  • 1/2 cup salsa
  • 8 burrito sized tortillas
  • 2 cups shredded sharp cheddar cheese

Directions

  1. Preheat oven to 375 degrees.
  2. Line two baking sheets with parchment paper.
  3. In a large bowl, mix chicken, taco seasoning, cream cheese, and salsa.
  4. Layer half of your tortilla with the chicken mixture and top with 1/4 cup cheddar cheese. Fold in half.
  5. Repeat to make 8 quesadillas.
  6. Bake for 8-10 minutes until the tortillas start to brown on the edges and are crispy.

Serves 8
